After harvesting this variety, which is unique for the exceptional Arabica acidity of the Tournon plantations, the beans undergo natural colouring that gives them an intense emerald green colour, making them unique and placing them firmly among high-end coffees. During the roasting phase, Torrefazione Bontadi, melts the sucrose present in the beans, separating it into glucose and fructose, and developing coloured elements due to caramelisation, which give the roasted beans their unmistakable hue. The balance of this extremely delicate phase, gives the blend lasting fragrance and aroma, making this an art.
